Mini Chocolate Molten Cakes


6oz semi sweet choc. chips
2 sticks butter
1/4 cup sugar
5 eggs
2tbs all purpose flour *sifted*

Melt chocolate chips & butter in microwave for 30 seconds. Then on 15 second intervals until melted, stirring after each time. 

Slowly whisk eggs and sugar together ( trying not to incorporate much air.)

Place chocolate mixture ONTO bowl of ice. ( *Ice bath* this cools the chocolate so that when you add eggs they do not scramble. - this is called tempering.) once slightly cooled & add egg mixture. 

Stir in flour.

Pour into lined baking cups 3/4 of the way full. Bake at 375* for 10 mins. (slightly liquid top is desired)

*Optional finish*: Remove paper & top with vanilla ice cream & chocolate syrup.
